Current Status of Extraction and Application of Capsaicin

Abstract: In this paper the properties, extracting technics and the uses of capsaicin are reviewed. Some typical methods are enumerated such as solvent extraction, microwave and supercritical CO2 fluid extraction. Furthermore, the perspective of its utilization is briefly introduced.
